La Religieuse (the Nun) is a term used for the crust of cheese that forms at the bottom of a fondue pot or the crusty rind of well grilled half wheel raclette that can be heated next to the fire. Made in an old presbytery (Fromagerie du Presbytère), without a doubt, La Religieuse was a predestined name.
