Coconut dacquoise base made with rice flour, covered with an exotic pineapple, banana, passion fruit, mango and lemon confit, then a layer of whipped ganache with baby ginger from Chapeau Melon Farm in L’Ange-Gardien in the Outaouais, and topped with an exotic frosting made with the same fruits as the confit.
