The glory is made of a chocolate biscuit viennois, sprinkled with 70% dark chocolate shards & topped with blueberry compote & a white chocolate ganache flavoured with sweetclover, a vanilla-like essence from Québec. The cake is then covered in white chocolate icing. Pucks are also made with biscuit viennois, but are maple flavoured & garnished with maple chips, maple-mascarpone cream & raspberry jelly & icing. And the finishing touches are crumble rosettes garnished with a red-berry cream & dark chocolate decorations.
