The artisanal baking profession is at the heart of Quebec’s gastronomic culture, yet the industry is currently facing a shortage of skilled talent. To address this challenge, Première Moisson, in collaboration with the Institut de tourisme et d’hôtellerie du Québec (ITHQ), has developed a comprehensive specialized training program designed to help individuals become professional bakers.
The next cohort of the Become a Baker in Quebec program will begin in March, and registrations are now open. This program is an excellent opportunity for anyone who dreams of working in artisanal baking or who is looking to transition into a hands-on, creative, and rewarding career.
Who is this program for?
This training program is open to anyone interested in pursuing a career as a baker, even with no prior experience in baking or food service. Eligibility criteria include:
- Proficiency in spoken and written French
- Minimum age of 16
- Successful completion of a pre-admission interview
- Legal authorization to work in Canada
- No academic prerequisites required
What the program includes
- A paid training program totaling 994 hours, combining theory and hands-on experience
- Approximately 25% theoretical instruction (fermentation, mixing, shaping, baking, etc.)
- 75% on-the-job training in a real work environment
- Online access to theoretical courses
- Viennoiserie courses held at ITHQ, a recognized centre of excellence
- Over 850 hours of professional experience within Première Moisson bakeries
Cost and financing
The total cost of the program is $2,824, with the following advantages:
- $0 to pay before starting
- Weekly payroll deductions of $27.15
- After 2 years of employment at Première Moisson, the full amount is reimbursed, provided you are still employed
In summary, the program allows you to train with no initial investment, gain hands-on experience on the job, and have the full cost reimbursed over time.
Certification and career opportunities
Participants who successfully complete the program receive an ITHQ certification, recognized for its excellence in the culinary and hospitality fields.
