Unsweetened swiss birchermüesli with maca

Ingredients

  • 1 Granny Smith apple
  • Juice of 1 freshly squeezed lemon
  • 1 1/2 cup (375 ml) rolled oats
  • 1/2 cup (125 ml) slivered almonds
  • 3 1/2 cups (875 ml) milk
  • 1 cup (250 ml) 2% M.F. plain yogourt
  • 2 1/2 tbsp (37.5 ml) maca powder
  • 1 cup (250 ml) berries of your choice
  • Honey or agave syrup, to taste
  • Milk, to taste

Preparation

PREPARE THIS THE EVENING BEFORE.

  1. Over a large bowl, grate apple with skin and stir in lemon juice.
  2. Add oats, almonds, milk, yogourt and maca to apple in bowl, mixing well.
  3. Cover and refrigerate at least 12 hours.
  4. Serve for breakfast, garnished with fresh berries and, if desired, sweetened to taste with honey or agave syrup. If mixture is too thick, thin it with a little milk.
  5. Refrigerated, the birchermüesli keeps for 2-3 days.

MULTIGRAIN VARIATION

Mix rolled oats with other grains (kamut, spelt, etc.).

 

SEASONAL VARIATION

Vary the fruit by replacing them with what’s in season or whatever inspires you!

 

HIGHER-PROTEIN VARIATION

Replace the milk with soy milk.

 

AROMATIC VARIATION

Grill the rolled oats and almonds in the oven at 375ºF (190ºC) or in a skillet on medium-high heat, until the almonds start to brown. Turn as needed to grill evenly.

 

OMEGA VARIATION

Instead of maca powder, use flaxseed, chia seeds or hemp seeds.
