Gourmet bread pudding

Ingredients

Pudding

  • ½ of a Muesli bread (Première Moisson)
  • 1 cup (250 ml) of Strawberry jam (Première Moisson)
  • 14 marshmallows
  • 2 cups (500 ml) of warm milk
  • 3 egg yolks
  • ¼ cup (62 ml) of cane sugar
  • 4 tbsp. (60 ml) of melted unsalted butter
  • 1 tsp. (5 ml) vanilla extract

Meringue

  • ¼ cup (62 ml) of sugar
  • 3 egg whites

Preparation

Pudding

  1. Preheat the oven at 350 °F (176 °C).
  2. Cut the bread into cubes.
  3. In a large bowl, pour the warm milk onto the bread cubes. Mix with a wooden spoon. Set aside.
  4. In a large bowl, whisk together egg yolks, cane sugar, melted butter and vanilla.
  5. Add the bread mix into the egg mixture and stir with a wooden spoon.
  6. In a buttered 8 inches cooking deep dish, arrange the bread mixture.
  7. Bake for 25 minutes at 350 °F (176 °C).
  8. Remove the dish from the oven and arrange the marshmallows onto the pudding.
  9. Using a spoon, cover with strawberry jam. Set aside.

Meringue

  1. Using an electric mixer, beat together the sugar and egg whites to obtain a smooth mixture.
  2. With a spatula, pour the meringue onto the pudding.
  3. Place the dish in the oven at 350 °F (176 °C) and remove when the meringue is golden.

Note: If you have a kitchen torch, you can use this method to brown the meringue.
